If you like pina coladas... (and other cocktails)

The sun is out at last – time to dust off that shaker and whip up some classic cocktails...

Mojito

Probably the most popular cocktail on the planet right now, but few people make them at home.

Makes 1

Cut a lime into 8 chunks and place in a cocktail shaker or tall glass. Add 2 sprigs of mint and 2 teaspoons of caster sugar or soft brown light sugar. Use a muddler or rolling pin and crush the fruit and mint to release the juice. Pour over 50ml white or golden rum and top up with crushed ice. Shake a few times or stir well. Top up with a splash of soda water and serve.

Strawberry Daiquiri

Tangy and fruity, great for using and fresh or frozen berry you like.

Makes 1

Chop a handful of strawberries and place in a cocktail shaker or tall glass. Add the juice of half a lime and 2 teaspoons of caster sugar or soft brown light sugar. Use a muddler or rolling pin and crush the fruit and release the juice. Pour over 50ml white or golden rum and top up with ice cubes. Shake well for a few seconds and strain into a martini glass. Garnish with strawberry and serve.

Piña colada

Impossible to drink without singing along. This retro cocktail is back and bang on trend

Makes 1

In a blender whizz 50ml white or golden rum, 100ml pineapple juice, juice of half a lime, 3tbsp coconut cream (from a can) and a few handfuls of ice. Once smooth pour into a chilled or frozen glass and garnish with fresh pineapple chunks.

TIP: Make life easy and whip up a quick batch of cocktails with ready-made mixers. Just add your chosen spirit and ice to Funkin Pina Colada or Strawberry Daiquiri Cocktail Mixers to make a cheat's cocktail as good as the real thing. £2.99, 750ml (makes 7 cocktails), Waitrose.
