If you like pina coladas... (and other cocktails)
The sun is out at last – time to dust off that shaker and whip up some classic cocktails...
Probably the most popular cocktail on the planet right now, but few people make them at home.
Cut a lime into 8 chunks and place in a cocktail shaker or tall glass. Add 2 sprigs of mint and 2 teaspoons of caster sugar or soft brown light sugar. Use a muddler or rolling pin and crush the fruit and mint to release the juice. Pour over 50ml white or golden rum and top up with crushed ice. Shake a few times or stir well. Top up with a splash of soda water and serve.
Tangy and fruity, great for using and fresh or frozen berry you like.
Chop a handful of strawberries and place in a cocktail shaker or tall glass. Add the juice of half a lime and 2 teaspoons of caster sugar or soft brown light sugar. Use a muddler or rolling pin and crush the fruit and release the juice. Pour over 50ml white or golden rum and top up with ice cubes. Shake well for a few seconds and strain into a martini glass. Garnish with strawberry and serve.

In a blender whizz 50ml white or golden rum, 100ml pineapple juice, juice of half a lime, 3tbsp coconut cream (from a can) and a few handfuls of ice. Once smooth pour into a chilled or frozen glass and garnish with fresh pineapple chunks.
