Recipe: Beef and pumpkin stew

Pumpkin helps make a hearty stew that's cheap, delicious and filling... 

 

Serves 4

Ingredients

1tbsp Flora Cuisine

500g lean stewing steak

1 onion, finely chopped

750g pumpkin or butternut squash, peeled, deseeded and diced

2 tbsp tomato puree

½ tsp cinnamon

½ tsp ground coriander

1 Knorr Beef Stock Pot, mixed with 500ml boiling water

300g couscous

Cooking time

10 minutes preparation, 90 minutes cooking time

How to make it

  • Heat the Flora Cuisine in a large saucepan over medium high heat. Add the steak and stir frequently until browned for about 5 minutes. Add onion, pumpkin, tomato puree and spices. Cook, stirring for about 3-4 minutes. 
  • Add stock, bring to the boil, reduce the heat, cover and simmer over low heat for about an hour, until the pumpkin and beef are tender.
  • Meanwhile prepare the couscous following pack instructions. Serve the stew with the couscous. Serve with natural yogurt and some chopped coriander
