Recipe: Peanut Butter and Banana Quesadillas

Barbecues aren't all about the meat, so indulge in a sticky treat from GBBO winner Ed Kimber once the coals have died down...


4 flour tortillas

15g (½oz) unsalted butter, melted

4 tsp light brown sugar

Ground cinnamon, to sprinkle

100g (3½oz) peanut butter

2 large bananas, sliced

40g (1½oz) dark or milk chocolate, chopped

20g (¾oz) mini marshmallows

Cooking time

5 mins preparation, 5 mins to cook

How to make it

  • Brush one side of each tortilla with melted butter and sprinkle with the sugar and a little ground cinnamon. Spread peanut butter over one half of each tortilla and top with sliced banana, dark chocolate and marshmallows. Fold over the other half of the tortilla and press to seal.
  • Cook the quesadillas on the barbecue for about two minutes, each side, until gooey and toasted. Remove from the heat and cut into wedges to serve.
