skills: make your own muesli

Bags of premium muesli and granola can cost a fortune. Save yourself a few quid and start making your own bespoke brekkie...

 

Fussy eaters will no doubt spend their first few minutes in front of a bowl of muesli picking out all the bits they don't like. It'd be much simpler if every morsel spooned into a bowl was eaten, wouldn't it? Making your own muesli blend has never made more sense, you could even make a different blend for everyone so there are no complaints. 

The basics...

to make about 12 portions you'll need...

4 cupfuls oats (about 250g)

1 cupful mixed nuts/seeds (about 100g)

1 1/2  cupfuls dried fruit (about 150g)

Make it your own...

Oats. Use whatever type of oats you like, rolled oats, jumbo oats or gluten free. If you want to really mix things up swap some oats for barley flakes, wheat, quinoa or bran flakes, or even some oatbran or wheatgerm. 

Nuts. Your favourite nuts will fit the bill; almonds, hazelnuts, brazils, walnuts, pistachios or pecans. Give any larger nuts a chop first to keep each bowlful similar. Seeds make a tasty addition too; pumpkin, sunflower, sesame, flax or chia. Coconut flakes or dessicated coconut will add loads of flavour.

Fruit. Dried fruit adds much-needed sweetness without resorting to adding sugar to the mix. Raisins, sultanas dried cranberries, chopped apricots, dates or prunes all make juicy additions, but don't rule out dried cherries, figs, apples, papaya or mango for a more tropical twist.

Extras. A few teaspoons of ground cinnamon, a little mixed spiced or some finely grated orange zest will give you extra oomph. If you like vanilla, mix a few teaspoonfuls of vanilla with a cupful of oats, and dry in a very low oven for a few minutes.

Mix and store...

Toss all your ingredients together and store in a large airtight box or jar. Use within 4 weeks. 

For an extra fruit boost, make your muesli into Bircher muesli. Take 1 1/2 cupfuls of muesli and place in a bowl, add roughly 150g natural yogurt, 2 apples coarsely grated and 150ml milk. Stir well, cover and leave overnight. Top with extra fruit and a dollop of honey to serve.
