If you need a quick and healthy dish, grab some seafood and get cooking.
350g cooked frozen or chilled tiger prawns (defrosted if frozen)
300g dried tagliatelle
1 tbsp vegetable oil
4 tsp Thai red curry paste
400g can chopped tomatoes
100g Sweet Chilli Light Philadelphia
Snipped chives and finely sliced red chilli (optional), to garnish
5 mins prep, 10 mins on the hob
How to make it
- Cook the tagliatelle in boiling water according to packet instructions.
- Whilst the pasta is cooking, heat the oil in a pan and add the prawns. Cook for 3-4 minutes. Once cooked, add the curry paste and tomatoes and cook for a further 3-4 minutes. Stir in the soft cheese and heat through until you get a creamy consistency.
- Drain the pasta and add to the pot with the prawn sauce. Mix well and serve hot, garnished with the chives and chilli (if using).
