My current contact order states that I can see my two children every Saturday. I have now started a new job and do shift work, where I work different days each week including weekends.
Is it possible to have the current contact order amended to variable one day a week access?
If so how do I go about this?

You would need to apply to the courts for the order to be varied, I'm 99% certain that you would have to firstly attend mediation before applying to see if you and your ex could make an agreement without the courts interaction.

I think you should first try to renegotiate with the mother, if that's not possible, as GTTS has said, mediation to try and resolve it would be your next step. If mediation fails you would be applying for a variation of the existing order.
If at all possible, it would be helpful to get your work rota as far in advance as you can, so that a schedule can be worked out that suits you both.
